Pork Picnic Roast Recipe

This Berkshire pork picnic roast is ideal for a comforting, hearty meal. Slow roasting or smoking brings out its rich flavor and tender texture.

Ingredients:

  • 1 pork picnic roast (4-6 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • Optional: fresh herbs (rosemary, thyme)
  • 1 cup chicken or vegetable broth

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. Rub the roast with olive oil, then season with salt, pepper, garlic powder, and paprika. Add fresh herbs if desired.
  3. Place the roast in a roasting pan and pour broth around it.
  4. Cover with foil and roast for 3-4 hours, or until the internal temperature reaches 190°F (88°C) for pulled pork texture.
  5. Remove foil and roast an additional 20-30 minutes to develop a golden crust.
  6. Let the roast rest for 15 minutes before slicing or shredding. Serve with your favorite sides or barbecue sauce.

Tip: For a smoky flavor, try slow-smoking the roast at 225°F (107°C) for 6-8 hours instead of roasting.
